Vegan Scandinavian Baking Guide
I have fallen in love with Scandinavian Baking! When my family moved to Norway I noticed bakes in the shops I don't often see outside of Scandinavia. And most of the time these treats are not vegan.
I wanted my family to still participate in the Scandinavian traditions while upholding our vegan beliefs. However, I was unable to find quality vegan recipes. So I set about to veganize these desserts, with my Norwegian side of the family taste testing for authenticity. I believe they represent not just vegan version of treats they know and love, but will yield results that can rival any version, vegan or not. I’m excited to share these recipes with you!

I have included instructions on how to make all of the recipes by hand and by mixer. A stand mixer helps, but is certainly not necessary. I have tested every recipe making by hand and while it only adds a little bit more time, the bakes come out beautifully!
