  • 2 tablespoons olive oil

  • 1/2 onion, diced

  • 2 garlic cloves, minced

  • 1 red bell pepper, diced

  • Large handful of kale or spinach

  • 2 teaspoons dried oregano

  • Pinch of red pepper flakes

  • 1 teaspoon salt

  • 3 tablespoons tomato paste

  • 1 cup/200 g uncooked orzo pasta

  • 1 can diced tomatoes (400g/14 oz)

  • 1 can chickpeas, drained

  • 2 1/2 cups/590 ml vegetable broth


Optional additions to enhance the dish:

  • 2 tablespoons vegan butter

  • Kalamata olives, halved

  • Crumbled vegan feta cheese (I use Violife)

  • Fresh dill, chopped

  • A squeeze of lemon juice


Step-by-Step Preparation


1. Sauté the Vegetables


First preheat the oven to 205C/400F. Then heat the olive oil in a large oven-safe skillet or pan over medium heat. Add the diced onion and cook until it softens, about 5 minutes. Stir in the minced garlic and diced red bell pepper, cooking up to 5 minutes until fragrant and tender.


2. Add Greens and Seasonings


Toss in the torn kale or spinach and cook until wilted. Sprinkle the dried oregano, red pepper flakes, and salt over the vegetables. Stir well to combine the flavors and saute a couple minutes.


3. Build the Sauce


Mix in the tomato paste, coating the vegetables evenly. Pour in the diced tomatoes and the chickpeas. Stir everything together.


4. Add Orzo and Broth


Pour the uncooked orzo into the pan, then add the vegetable broth. Stir to combine all ingredients. Bring the mixture to a gentle boil.


5. Bake the Dish


If your pan is oven-safe place it in the oven to bake . If not, carefully pour the mixture into a baking dish. Bake uncovered for about 10-15 minutes, or until the orzo is tender and most of the liquid has been absorbed. I always check it after 10 minutes.


6. Optional Finishing Touches


Once baked, stir in vegan butter for extra creaminess if desired. Top with halved Kalamata olives, crumbled vegan feta, fresh dill, and a squeeze of lemon juice to brighten the flavors.


Tips for Success

  • Use fresh greens like kale or spinach for a nutrient boost and vibrant color, but you can omit this.

  • Don’t overcook the orzo while baking or it will become clumpy.

  • Adjust seasoning to your taste, especially salt and red pepper flakes for a bit of heat.

  • Add protein chickpeas are a great protein addition, which also add texture and fiber. But feel free to change it up

  • Try different toppings you can omit the Greek inspired flavors and change it up to include your favorites like other kinds of vegan cheese and herbs.
